Sandwich shop franchise Baguette Express has opened its first outlet on Edinburgh's Royal Mile. The outlet is owned by franchise owner Mohammad Afzal and brings the total number of operating Baguette Express locations to 55. The Royal Mile in Edinburgh is a popular tourist area that runs from the Castle to the Palace of Holyroodhouse.
Mohammad said: "I have always had an interest and when I started looking at food offerings, Baguette Express really stood out. The fact is that I eat there myself and I know just how fresh and extensive their range is. The Royal Mile is simply a river of tourists in the summer and it is busy the rest of the year as well, so the passing trade will be exceptional."
In additional to the outlet he has opened, Mohammed is keen to open another Baguette Express franchise at the upper end of the Royal Mile so he can be positioned at both ends of the route. He added: "I looked at possibilities in Fife, in areas such as Cowdenbeath but nothing compares to the Royal Mile for consistent footfall. Up near the Castle would be really tempting option."

Robin and Billy Stenhouse founded Baguette Express in 1999 with the opening of their first store in Scotland. Since then the company has successfully franchised it concept throughout Scotland and England and is on target to have 70 outlets operating by the end of this year.
